Chuck Roll is a large, boneless cut that comes from the area between the ribs and backbone. As a whole, it contains a mix of tender and relatively tougher muscles. The chuck roll is typically broken into sub-cuts known as the Chuck Eye Roll (good for braising/slow cooking) and the Chuck Under Blade (for Denver steaks).
